Ingredients

  • 8 cups water
  • 1 large ham bone
  • 2 cups green dried split peas
  • 2 large carrots, peeled and diced small
  • 2 medium onions, chopped small
  • 3 cloves crushed garlic
  • 2 large celery ribs, include leaves, chop small
  • 1 large bay leaf
  • 2 beef bouillon cubes
  • 1 teaspoon salt
  • 1/4 teaspoon black peppercorns, crushed
  • 1 pinch dried thyme; parsley

Preparation

Step 1

Rinse peas well in cold water and soak for 2 hours in 2 cups cold water.
Cut away as much fat as possible from ham bone/hock/shoulder. Rinse ham well.
In a large stock pot, sauté garlic, onions and celery in some butter until softened.
Drain water from peas and add to stock pot.
Add 8 cups of water, bouillon cubes, ham bone, bay leaf and seasonings.
Bring to boil, reduce heat and simmer for 2 hours.
Remove ham bone and cut off any remaining ham, cut into bite size pieces and return to soup. (Discard ham bone.)
Add carrots to soup and simmer until cooked.
Remove bay leaf and discard. Adjust seasonings to taste (add favorite spices if desired).
If you desire a smooth soup, then puree' in batches in a food processor or blender.
