Lamb Chops with Lemon

Great grilled lamb recipe from Bon Appetit magazine. Serve wth couscous, tziziki, and green beans with lemon, parsley, and pecans.

Ingredients

  • 3 large shallots, minced
  • 6 Tbs chopped fresh mint
  • 6 Tbs chopped fresh oregano
  • 6 large garlic cloves, miced
  • 1 Tbs sugar
  • 24 lamb chops (abt 4 lbs)
  • 6 Tbs olive oil
  • 3 Tbs fresh lemon juice
  • 1 Tbs finely grated lemon peel

Step 1

Mix shallots, mint, chopped mint, chopped oregano, garlic, sugar and 1 Tbs salt in a small bowl. Press 1 rounded tsp mixture onto eye of each lamb chop. Turn chops over onto large rimmed bakin sheet. Press remaining herb mixture onto eye of each chop. Cover lam with plastic wrap and refrigerate overnight.

Whisk olive oil, lemon juice, and peel in a small bowl until slightly thickened and well blended. Season lightly wiht salt and generously with black pepper. Spoon oil lighly over chops. Turn chops over and spoon remining oil mixture over. Let stand at room temp about 1 hour.

Prepare BBQ grill (medium high heat). Grill lamb to 125 degress for medium.
