Ingredients
- 8 eggs, slightly beaten
- 1 tbsp fresh basil, snipped
- 2 tbsp olive oil
- 1 Cup fresh corn kernels
- 1/2 cup zucchini, chopped
- 1/3 cup green onions, thinly sliced
- 3/4 cup plum tomatoes, chopped
- 1/2 cup cheddar cheese, shredded
Preparation
Step 1
In medium bowl, combine eggs and basil, set aside. Heat oil in large ovenproof skillet. Add corn, zucchini and green onions. Cook and stir for 3 minutes. Add tomatoes. Cook, uncovered, over medium heat for 5 minutes or until vegetables are tender crisp, stirring occasionally.
Pour egg mixture over vegetables in skillet. Cook over medium heat. As mixture sets, run spatula around edge of skillet. Continue cooking and lifting edges until egg mixture is almost set. Sprinkle with cheese.
Place skillet under broiler. Broil for 1 to 2 minutes or until top is just set and cheese is melted.
