Ingredients
- 1 3/4 cups sifted cake flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 cup sugar (plus 2 Tbs)
- 1/2 cup melted butter
- 1 egg
- buttermilk (approximately 1/2 -3/4 cup)
- (*add a few drops of lemon juice to regular milk.)
- 1 tsp. vanilla extract
- 2 tart apples, peeled, sliced thin
- 1 tsp cinnamon
Preparation
Step 1
Sift flour, baking powder, soda, salt and 1 cup sugar into mixing bowl.
Pour ¼ cup butter into 1 cup measuring cup. Add egg. Fill cup with buttermilk. Pour into flour mixture; beat vigorously 1 minute or until batter is smooth. Stir in vanilla.
Pour remaining butter into ovenproof skillet or baking dish
(*I melt the butter in my Calphalon pan in the oven in the first place)
pour batter over butter in skillet/baking dish. Arrange apples over top.
Combine cinnamon with 2 Tbs. sugar; sprinkle over apples.
Bake in a preheated 350 degree oven 35-40 minutes.
Serve hot from skillet or cool 5 minutes, then invert onto rack.
Yield 8-10 servings.
