Ingredients
- 1/2 cup dried black beans or 19 ox. can
- 1 bay leaf
- cooking spray
- 1/2 cup peeled and chopped broccoli stems
- 1/2 cup cubed carrot
- 1 cup cubed celery
- 1 cup chopped onions
- 1 tbsp. each thyme and basil
- 1/2 cup dry white wine
- 8 oz. boneless, skinless chicken breast
- 4 tbsp. barbecue sauce
- 1 cup chicken stock
- 12 oz. evaporated skim milk
- 2 cups broccoli florets
- 1 tbsp. cornstarch dissolved in 2 tbsp. cold water
- 1 tbsp. liquid smoke
- 1 tbsp. Worcestershire sauce
- 1 tsp. Tabasco
- 1/4 cup chopped fresh cilantro
Preparation
Step 1
Cook chicken breast. Cube when cooled. Saute vegetables until tender-crisp. Place with all ingredients in a large stock pot and simmer for 30 mins.
