Bacon Cheeseburger Meatloaf

Ingredients
- 1 lb ground pork
- 1 lb ground beef
- 1 lb ground veal
- 1 lb pancetta, cooked
- 3/4 cups shredded Colby cheese
- 3/4 cups shredded Swiss
- 1/2 cup shallots, minced
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- 1/4 cup mayonnaise
- 1 Tbsp Worcestershire sauce
- 1/2 tsp garlic salt
- 1/2 tsp ground black pepper
- 1/3 cup barbecue sauce
- 2 Tbsp Dijon mustard
- 1/2 cup French-fried onions

Preparation
Step 1
1. Preheat oven to 350°F.
2. Combine the ground pork, beef, and veal in a large bowl. Add cooked pancetta, cheeses, shallots, eggs, panko breadcrumbs, mayonnaise, Worcestershire sauce, garlic salt, and black pepper until well incorporated. Press the meat mixture into a nonstick loaf pan.
3. Mix together the barbecue sauce and mustard in a small bowl. Spread mixture on top of the meatloaf, reserving 2 Tbsp of the glaze. Bake for 50 minutes.
4. Remove from oven and spread remaining glaze on top of the meatloaf. Sprinkle French-fried onions and bake for an additional 10 minutes until the meat is cooked through.
