Sweet Potato Souffle

Ingredients

  • 1/2 C Margarine
  • 1 C Sugar (or 1/2 C sugar + 2 C marshmallows)
  • 2 Eggs
  • 2 Large cans sweet potatoes
  • 1 C Evaporated milk
  • Topping
  • 1/2 C Margarine
  • 1/2 C Bronw sugar
  • 1 C Cornflake crumbs
  • 1/2 C Pecans, chopped

Preparation

Step 1

If marshmallows are used, melt in warm oven with butter (be careful not to burn.)
Mix potatoes, eggs, sugar & milk with mixer until smooth, pour in melted marshmallows & butter.
If marshmallows are not used, mix all ingredients together in bowl. Pour into baking dish.

Topping

Melt margarine and add brown sugar, cornflake crumbs, and nuts. Crumble over potatoes & bake 20 minutes @ 400ºF
