Ingredients
- 1 can shoepeg corn (white sweet corn) drained
- 1 can sweet peas, drained
- 1 can green beans, drained
- 1 c. celery chopt
- 1 medium onion, chopt
- 1 medium green pepper, chopt
- 1 3oz. can pimentos, chopted
- 3/4 c. granulated sugar
- 1/2 c. white distilled vinegar
- 1/4 c. evoo

Preparation
Step 1
1. In small saucepan, combine sugar, vinegar and oil. Heat until sugar is dissolved. Remove from stovetop and let mixture cool.
2. In a large bowl, combine 1-7 (all vegs)
3. Pour cooled vinegar mix over vegetables and mix until thoroly coated. Cover and refrig overnight so that vegetables marinate. Serve cold.
3. Makes 12 1/2 servings.
