Ingredients

  • 1

    can shoepeg corn (white sweet corn) drained

  • 1

    can sweet peas, drained

  • 1

    can green beans, drained

  • 1

    c. celery chopt

  • 1

    medium onion, chopt

  • 1

    medium green pepper, chopt

  • 1

    3oz. can pimentos, chopted

  • ¾

    c. granulated sugar

  • ½

    c. white distilled vinegar

  • ¼

    c. evoo

Directions

1. In small saucepan, combine sugar, vinegar and oil. Heat until sugar is dissolved. Remove from stovetop and let mixture cool. 2. In a large bowl, combine 1-7 (all vegs) 3. Pour cooled vinegar mix over vegetables and mix until thoroly coated. Cover and refrig overnight so that vegetables marinate. Serve cold. 3. Makes 12 1/2 servings.
