Italian Mixed Potato Salad

Ingredients

  • 12 oz. new potatoes, peeled
  • 6 oz. green beans, trimmed
  • 1 tbsp. olive oil
  • 1 head romaine lettuce
  • 2 large tomatoes, cut into wedges
  • or 15 cherry tomatoes, halved
  • 3 green onions, sliced
  • 1/2 cucumber, sliced
  • 1/2 cup celery, sliced
  • 1/2 tsp. oregano
  • 3 tbsp. chopped fresh parsley
  • sea salt and fresh ground pepper
  • 1 tbsp. red wine vinegar

Step 1

Cook potatoes in pot of salted boiling water for ~15 mins. or until tender. Add beans last 4 mins. Drain and cover with cold water to stop cooking. When cold, drain well. Transfer beans to a bowl. Thickly slice potatoes and add to bowl, moistening with a little olive oil. Toss well. Wash and chop lettuce. Add with tomatoes to bowl and toss lightly. Transfer to serving bowl and sprinkle with parsley, salt and pepper. Dress with olive oil and vinegar. Toss again.
