Blintz Casserole

Ingredients

  • Batter:
  • Cheese Filling
  • 1 1/2 lbs. ricotta cheese
  • 2 8-oz packages cream cheese, room temp
  • 2 eggs
  • 1/4 c. sugar
  • 3 1/2 Tbsp. fresh lemon juice
  • 1 tsp. grated lemon peel
  • 1 tsp. grated orange peel
  • 1/8 tsp. salt
  • 1 cup flour, sifted
  • 1 Tbsp. baking powder
  • 1/8 tsp. salt
  • 1 c. butter, melted
  • 1/2 c. sugar
  • 3 eggs
  • 1/4 c. milk
  • 1 tsp. vanilla extract or 1/2 tsp. almond extract
  • 1/3 c. blanched slivered almonds, toasted
  • Sour Cream
  • Strawberry jam

Preparation

Step 1

For filling:
Using electric mixer, bear all ingredients until blended. (Can be prepared 1 day ahead.)

For batter:
Preheat oven to 300. Butter 9x13" baking pan. Combine flour, baking powder and salt in large bowl. Mix in butter, sugar, eggs , milk and extract.

Pour half the batter into prepared dish. Spoon filling over, spreading gently without mixing into batter. Pour remaining batter over. Bake until set, about 1 1/2 hours. sprinkle with almonds. Cut into squares (and then sprinkle with almonds maybe). Serve warm, pass sour cream and jam separately.
