Sweet Potatoes Roasted with Glaze-Paul's Recipe

This dish uses 2 recipes, for baking and for the glaze. When putting the potatoes in the oven, ignore the instructions to put them in the oven when it's cool, just preheat normally and then put them in. This prevents the bottoms from burning. Is delicious!

Ingredients

  • Roasted Sweet Potatoes
  • 3 pounds sweet potatoes (about 4 medium), ends trimmed, peeled, rinsed and cut into 3/4 inch thinck rounds
  • 2 Tbsps vegetable oil
  • 1 tsp salt
  • Ground black pepper
  • Roasted Sweet Potatoes Spiced Brown Sugar Glaze
  • 1/4 cup pakced light brown sugar
  • 2 Tbsps apple juice
  • 2 Tbsps unsalted butter
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp ground nutmeg

Preparation

Step 1

To Make Glaze:

Heat all ingredients in a small saucepan over medium heat. Cook, stirring constantly, until the butter has melted and the sugar is dissolved, 2-4 minutes. Use in step 3 of Roasted Potato Recipe


To Make Roasted Sweet Potatoes:

1. Toss pototoes in a large bowl with the oil, salt and pepper to taste and until evenly coated. Line a large heavy-duty rimmed baking sheet with foil and coat with vegetable oil spray. Arrange potatoes in a single layer on the sheet and cover tightly with foil. Adjust oven rack to the middle position and place the potatoes in a preheated oven at 425 degrees, cook for 30 minutes.

2. Remove the baking sheet from the oven and carefully remove the top layer of foil. Return the potatoes to the oven and cook until the bottom edges of the potatoes are golden brown, 15-25 minutes.

3. Remove the sheet from the oven and brush tops of potatoes with the glaze. Flip them over and brush other sides with the glaze. Continue to roast until the bottom edges are golden brown, 18-22 minutes longer. Remove from oven; let potatoes cool 5-10 minutes; transfer to a platter and serve.
