Chocolate Cherry Biscotti

Ingredients

  • 2 1/4 cups flour
  • 1 cup sugar
  • 1/2 cup butter, melted, cooled
  • 2 eggs, slightly beaten
  • 2 tsp baking powder
  • 1 tsp vanilla
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup dried cherries, chopped

Preparation

Step 1

Heat oven to 350. Combine flour, sugar, butter, eggs, baking powder and vanilla in large bowl; mix until dough forms a ball. Stir in chocolate chips and cherries.

Divide dough in half. Shape each half into 12x2 inch log on lightly floured surface. Place logs at least 3 inches apart onto lightly greased cookie sheet.

Balk for 22-25 minutes or until surface is firm and golden around edges. Remove from oven. Cool 10 minutes.

Cut each log into 1 inch slices with serrated knife. Place slices, cut-side down,on cookie sheet.

Continue baking for 16-20 minutes, turning once, or until crisp and light golden brown on both sides.

Place onto cooling racks; cool completely.
