  • Crumb Topping:
  • 1 1/2 cup Bisquick mix
  • 2 Tbs. melted butter
  • 1/2 cup sugar
  • 1 tsp. vanilla
  • 1 egg
  • 1/2 cup milk
  • 1/2 cup flaked coconut
  • 1/3 cup packed brown sugar
  • 1/4 cup chopped nuts
  • 2 tablespoons butter or margarine, softened
  • 2 tablespoons fat-free (skim) milk
  • Fruit Topping:
  • Slice strawberries (peaches, or any other fruit); mix in sugar, stir and let set overnight so that there is plenty of juice.
  • Pour fruit/juice and serve with vanilla ice cream or whipped cream.

Step 1

Oven at 350.

Mix all ingredients for cake together and mix with a spoon; pour into pan sprayed with Pam. Bake 30 to 35 minutes until toothpick inserted in center comes out clean.

A “poor man’s dessert:
Instead of fruit or coconut crumb topping, you can fix this “icing” to pour over the cake:
½ cup milk
1 cup sugar
¼ tsp. vanilla
Bring to a boil, turn down stove and let simmer for a few minutes. Pour over cake while icing is warm/hot.
