Pasta with Sun Dried Tomatoes

  • 8 oz. oil packed sun dried tomatoes
  • 3 T. olive oil
  • 1/2 onion, chopped
  • 4 garlic cloves, chopped
  • 1 lb. peeled chopped tomatoes
  • 3/4 c. chicken stock
  • 1/4 t. salt
  • 1/4 t. black pepper
  • 2 T. chopped fresh basil
  • 1/2 c. dry white wine
  • 1 lb. penne
  • Parmesan cheese



Step 1

Finely chop sun dried tomatoes. Heat the olive oil in a large sauté pan on medium high heat. Add the onion and garlic and cook for 2 minutes. Stir in the tomatoes and sun dried tomatoes and cook for another 3 minutes. Add the chicken stock, salt, pepper, basil and wine. Bring to a boil and simmer for 5 minutes. Add the cooked pasta and heat through. Serve with Parmesan cheese.
