Ingredients

  • 4 chicken breasts
  • 4 cups minimum of chopped mushrooms
  • 1/2 onion, diced
  • 1/2 cup of dark beer, I prefer Black Butte Porter. In fact I swear by that one.
  • salt and pepper
  • garlic
  • garlic powder
  • onion powder
  • chili powder
  • dried parsley
  • cornstarch
  • 2 chicken gravy packets (beef works too!)
  • 1/4 cup heavy cream
  • 2-3 cups of water, but you can use chicken stock

Step 1

Brown chicken breasts on both sides in your heated pan. While chicken is browning add your diced onions to the slowcooker and a couple pinches of salt and about a pinch of pepper. Add about 1 tsp. of garlic powder, 1 tsp. dried parsley, 1 tsp. onion powder and 1/2 tsp. chili powder to your crockpot. Don’t forget to check on your chicken! Add 1 clove of minced garlic to your crock pot along with 3 cups of water and 2 chicken gravy packets. When your chicken is nearly finished browning, deglaze your pan with about 1/2-3/4 cup of beer and let it simmer for a minute or two. Add your chicken and any sauce in the pan to the slow cooker. I really like this beer because it doesn’t leave an overwhelming beer flavor to my dishes it just sings harmony. :) You may feel differently so use your judgement. Turn your crockpot on high and don’t forget to add in your mushrooms. Mix 4 tbsp. cornstarch with a few tablespoons of cold water- just enough to mix in the cornstarch completely. Then pour mixture into your crockpot with the goodies! An hour before serving I added 1/4 c. heavy cream. Depending on how long you cook yours you may need to slice the chicken before serving. Taste before you serve and use additional seasonings if needed. I recommend serving over white rice, plate lunch style. :)
