Scalloped Sweet Potatoes

Ingredients

  • 4 med. - lg. sweet potatoes (2lbs)
  • 4 strips bacon
  • 1 sm. onion. chopped
  • 2 1/2 tbsp. flour
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 c. milk
  • 1 1/4 c. grated parmesan cheese

Step 1

Preheat oven to 325. Peel potatoes, cut into 1/4" slices. Place sweet potatoes in large saucepan w/ enough water to cover; bring to boil. Boil 5-10 mins. or till tender; drain and set aside.

Meanwhile, fry bacon in lg. skillet over med. heat till crisp. Remove bacon; drain on paper towel. Crumble and set aside. Add onion to same skillet; cook and stir 5 mins. or till tender. Reduce heat; add flour, cooking and stirring until paste forms. Add salt and pepper. Increase heat to medium. Add milk; cook and stir until mix thickens slightly.

Arrange half of sweet potatoes in bottom of 11 x 7 baking dish. Sprinkle w/ half of bacon. Pour half of milk mixture over bacon. Top w/ remaining sweet potatoes; sprinkle w/ remaining bacon. Pour remaining milk mixture over top. Sprinkle w/ cheese. Bake 20 mins. or till potatoes are tender.
