Ingredients

  • 2 Tbls olive oil
  • 1 large onion, diced
  • 3 carrots, diced
  • 1/2 cup red cabbage, sliced
  • 4 radishes, diced
  • 1 cup broccoli, diced
  • 1/2 up jicama, diced
  • 1 green pepper, diced
  • 3 stalks celery, diced
  • 2 Tblsp minced fresh garlic
  • 1 cup black lentils
  • 1 can fire-roasted tomatoes, diced
  • 6 cups mock beef flavored vegetable stock
  • 1/4 cup pea powder
  • 1/2 cup apple cider vinegar
  • 3 Tblsp. agave nectar
  • 1 Tblsp dried basil
  • 1/2 Tblsp dried oregano

Preparation

Step 1

Saute all vegetables in olive oil for 5 minutes. Add tomatoes, lentils and vegetable broth. Mix well. Add pea powder, vinegar, agave and seasonings. Cover and simmer for 1 hour on low.
