Ingredients
- 2 Tbls olive oil
- 1 large onion, diced
- 3 carrots, diced
- 1/2 cup red cabbage, sliced
- 4 radishes, diced
- 1 cup broccoli, diced
- 1/2 up jicama, diced
- 1 green pepper, diced
- 3 stalks celery, diced
- 2 Tblsp minced fresh garlic
- 1 cup black lentils
- 1 can fire-roasted tomatoes, diced
- 6 cups mock beef flavored vegetable stock
- 1/4 cup pea powder
- 1/2 cup apple cider vinegar
- 3 Tblsp. agave nectar
- 1 Tblsp dried basil
- 1/2 Tblsp dried oregano

Preparation
Step 1
Saute all vegetables in olive oil for 5 minutes. Add tomatoes, lentils and vegetable broth. Mix well. Add pea powder, vinegar, agave and seasonings. Cover and simmer for 1 hour on low.
