  • 1 small onion, chopped
  • 1 clove garlic, crushed
  • 2 T. margarine
  • 10 oz. frozen spinach
  • 1/2 lb. hamburger
  • 1/2 c. stale bread crumbs
  • 1/4 c. Parmesan cheese
  • 2 eggs, slightly beaten
  • 1/2 t. fines herbs
  • 1 t. salt
  • dash pepper
  • 3 3/4 oz. manicotti noodles
  • 4 c. tomato sauce



Step 1

Sauté onion and garlic in margarine. Add thawed, squeezed dried, chopped spinach; heat until moisture is absorbed. Transfer to large bowl. Brown hamburger, stirring to break up. Add to spinach with breadcrumbs, cheese, eggs, herbs, salt and pepper; blend well. Fill each noodle with meat mixture. Any leftover can be blended into sauce. Pour 1 c. sauce into shallow baking dish. Lay manicotti side by side in dish; top with remaining sauce. Add ½ c. water. Cover dish and bake 375º for 1 hour. Sprinkle with Parmesan cheese.
