Ingredients
- 4 chicken breast (bone in and cut in half)
- 1 can of crushed tomatoes
- 4 cloves of crushed garlic
- 2 bay leaves
- fresh basil(3 leaves)
- olive oil
- 6 button mushrooms sliced
- 1/2 cup of white wine
Preparation
Step 1
Drizzle olive oil into a large hot skillet. Flame should be on low to medium
Place chicken skin side down and brown. Set aside into a deep baking pan
Take garlic and mushrooms and sauté for about 10 minutes. Add in 1 can of crushed tomatoes and white wine. Add salt and pepper to taste. Allow to simmer for 15 minutes-DO NOT cover.
Turn off heat and pour mixture all over chicken. Cover with foil and Bake at 350 for an hour and 30 minutes. Take foil off and bake for another 15 minutes. Serve and enjoy.
