Ingredients
- 1 cup goat cheese
- 1 tsp dried italian herbs
- 1 tsp chopped fresh italian parsley
- 6 boneless skinless chicken breasts
- salt
- pepper
- 1/4 olive oil
- 4 cloves garlic
- 1/4 cup sundried tomatoes
- 1 cup heavy cream

Step 1
mix goat cheese, herbs, salt and pepper. Make a slit down the side of each breast creating pockets. Spoon a layer of cheese mixture inside each breast. Season with salt and pepper. In a saute pan over medium high heat, heat olive oil, cook chicken turning once, 6 minutes each side. Remove chicken. Add chopped garlic, sun dried tomatoes and cream to pan. Scrap all bits off bottom of pan. Bring to a boil, simmer 5 minutes. Spoon sauce over chicken.
