Apricot Kuchen

Ingredients

  • 1 Duncan Hines Deluxe yellow cake mix (no pudding)
  • 3 eggs
  • 1/3 cup oil
  • 1 1/4 cups liquid (half water and half apricot nectar)
  • 1/3 cup apricot preserves, which have been pureed

Preparation

Step 1

Combine all ingredients in large mixing bowl and beat on high speed for 5 minutes (because of the extra sugar).

Bake in greased or sprayed Bundt pan at 350 F for about 40 minutes or until done. Let cool for a few minutes and turn out.

This cake freezes well.
