Roasted Holiday Turkey

We use this as our seasoning recipe for our turkey then cook it in our Nesco air roasting oven. We also brine our turkey prior to this preparation.

Our timeline which worked really well: Tuesday night - brine; Wednesday - follow this recipe & get it ready to roast; Thursday - roast

Ingredients

  • 2 large yellow or white onions
  • 1 stalk celery
  • 4 large carrots
  • 4 large shallots
  • Olive Oil
  • 1/2 bunch fresh thyme
  • 1/2 bunch fresh sage
  • 1/2 bunch fresh rosemary
  • salt & pepper

Preparation

Step 1

Rinse the bird completely with cold water, using your hands to massage the bird - also rinse inside the cavity.

Drizzle olive oil inside the cavity followed by generous amounts of salt & pepper.

Drizzle generous amounts of olive oil & salt & pepper over the outside of the turkey rubbing in.

Mix together chopped veggies & herbs & stuff the inside of the bird. This made a lot so we sprinkled the leftovers around the turkey in out Nesco.

We prepared this Wednesday & refrigerated overnight.
