Who would have ever thought that pineapple, cheddar cheese and Ritz crackers would make such a yummy side dish?

Ingredients
- 2 cans pineapple chunks (reserve 6 Tbsp. juice)
- 6 Tbsp. flour
- 2 C. shredded, sharp cheddar cheese
- 1/2 C. sugar
- 2 C. crushed Ritz crackers
- 1/2 stick melted butter

Preparation
Step 1
Mix the reserved juice and flour, then add to drained pineapple.
Mix in the shredded cheese.
Pour into a buttered 12X7 serving dish and sprinkle cracker crumbs over top. Drizzle with melted butter.
Bake at 350 for 25 - 30 minutes.
