Ingredients
- 1 1/2 cups (1 can) chickpeas, rinsed and drains
- 1/2 cauliflower, chopped into small pieces
- 1 cup cooked quinoa (about 1/3 cup dry)
- 2 flax eggs
- 1/2 tsp salt
- 1/2 cup finely minced shallot
- 1/4 cup whole wheat flour

Preparation
Step 1
1. process chickpeas until mostly broken up.
2 In a bowl, add chickpeas and remaining ingredients and mix until combined.
3. Warm a frying pan over medium heat and pour a bit of olive oil in. Shape "tots" with a tablespoon. Place tater tots in batches in pan and cook for a couple minutes on each side until browned and crispy. Store in fridge.
