cups (1 can) chickpeas, rinsed and drains
cauliflower, chopped into small pieces
cup cooked quinoa (about ⅓ cup dry)
cup finely minced shallot
cup whole wheat flour
1. process chickpeas until mostly broken up. 2 In a bowl, add chickpeas and remaining ingredients and mix until combined. 3. Warm a frying pan over medium heat and pour a bit of olive oil in. Shape "tots" with a tablespoon. Place tater tots in batches in pan and cook for a couple minutes on each side until browned and crispy. Store in fridge.
