Ingredients
- 8 chicken breast tenderloins
- 1/4 cup extra virgin olive oil
- 1 and 1/2 cups balsamic vinegar
- 1 cup golden raisins
- 3/4 cup sliced pimento stuffed olives
- 2 T capers
- garlic
- 1 cup sun dried tomatoes
- pepper to taste
- 1/2 cup brown sugar
- 1 cup white wine
- parsley
Preparation
Step 1
Combine olive oil, balsalmic vinegar, raisins, olives, cpaers, garlic, sun dried tomatoes and pepper for the marinade.
Marinate chicken tenderloins overnight in refrigerator, in covered glass container. Place breasts and marinade in baking disch.
Add white wine. Sprinkle with brown sugar and parsley.
Bake in 350 degrees oven for 30 minutes or can cook at 375 degrees.
