Ingredients

  • 1 cup sifted powdered sugar
  • 1/2 cup creamy peanut butter (use the organic or regular peanut butter from a bulk store...it is smoother in texture and works well in this recipe)
  • 3 tbsp. unsalted butter, softened
  • 1/2 tsp. vanilla extract
  • coating or molding chocolate in your choice of milk, dark or white

Step 1

1. Mix together powdered sugar, peanut butter, butter and vanilla using a hand or stand mixer. Place small portions of the batter in your hand and roll into a ball. Using the palm of your hand, pat down the batter on a clean work surface and flatten until it is 1/2 inch thick.
2. Using a smaller sized egg cookie cutter, cut out an egg and place it on a parchment-lined cookie sheet. Repeat this process with the remaining dough.
3. Place eggs in freezer for 20 minutes. In the meantime, prepare the chocolate.
4. Melt the chocolate in a double boiler over gently simmering water, or in the microwave on medium heat for a few minutes until chocolate is smooth.
5. Remove eggs from freezer and dip each one in the chocolate using a fork and spatula. Return dipped eggs to the parchment-lined baking sheet. If you want to decorate the eggs with nonpareils or sprinkles, do so before the chocolate sets.
6. Return the eggs to the freezer for another 20 minutes until chocolate is set. Remove and let sit at room temperature until eggs are no longer cold to the touch. Eggs can be packaged for gift giving or stored in an air-tight container.
