ORANGE JUICE CAKE

  • 2 c. flour
  • 2 tsp. baking powder
  • 3/4 tsp. grated orange rind
  • 1 tsp. vanilla
  • 1/2 c. shortening
  • 1 1/4 c. sugar
  • 1 unbeaten egg yolks
  • 2/3 c. orange juice
  • 2 egg whites beaten

Preparation

Step 1

Sift flour, baking powder and salt together.
Add orange rind and vanilla to the shortening and cream together.
Add 1 c. sugar to the shortening and cream till light and fluffy.
Add 1/4 c flour. Mix egg yolks and orange juice then add alternately with flour to creamed mixture.
Beat egg whites til foamy and add remaining 1/4 c. sugar.
Beat egg whites til stiff and add to batter and beat thoroughly.
Bake in floured/greased 8" layer pans in moderate oven (375 F)
