Sweet Potato Corn Bread

Ingredients
- 2 c flour (1 cup each white and whole wheat)
- 2 c cornmeal
- 1/2 cup sugar
- 7 tsp baking powder
- 2 tsp salt (try using less to decrease sodium)
- 4 eggs
- 3/4 c milk
- 1/3 c veg oil
- 2 2/3 c mashed cooked sweet potatoes

Preparation
Step 1
Preheat oven to 425*F.
In a large bowl, combine the first 5 ingredients
In a small bowl, combine eggs-milk-oil and sweet potatoes. Stir into dry ingredients just until moistened.
Pour into a greased 9x13 pan.
Bake 425*F for 30-35 minutes or until toothpick inserted in center comes out clean. Cut into squares and serve warm.
