Ingredients

  • 3/4 cup sugar
  • 5 TBSP corn starch
  • 1/4 tsp salt
  • 1 3/4 cups boiling water
  • 3 egg yolks
  • 1 TBSP butter
  • 1/4 tsp vanilla
  • 1 1/4 tsp grated lemon rind
  • 1/3 cup lemon juice
  • 3 - 4 egg whites
  • 6 TBSP sugar
  • 1 - 9 " baked pie shell

Step 1

Combine in top of double boiler 1/2 cup of the sugar, corn starch and salt. Gradually stir in boiling water. Cook over medium direct heat, stirring constantly, until smoothly thickened.
Beat remaining 1/4 cup sugar into egg yolks. Stir a little of the hot mixture into yolks, combine and return to mixture in top of double boiler and cook, stirring constantly, 2 minutes longer.
Remove from the heat; stir in butter, vanilla and lemon rind. Blend in lemon juice gradually.
Cool slightly, stirring occasionally. Turn into baked pie shell.

Beat egg whites until they form soft peaks. Gradually add the 6 TBSP sugar 2 tsp at a time, beating constantly, until very stiff.
Pile lightly on the filling, sealing meringue carefully to pastry edges.
Bake in a moderate oven, 350 degrees F 12 - 15 minutes or until peaks are golden brown.
Cool and serve.
