ROASTED CAULIFLOWER SALAD

Ingredients

  • 1 medium cauliflower
  • 3 tbsp olive oil
  • 1/3 tsp salt
  • Freshly grated pepper
  • 2 tbsp mayonnaise
  • 1 tbsp white balsamic vinegar
  • 1 tsp grainy mustard
  • 1/2 tsp honey
  • 2 tbsp chopped parsley

Preparation

Step 1

Preheat oven to 400F. Toss a medium cauliflower, cut into bite-sized pieces, with olive oil, salt and pepper. Spread cauliflower in a single layer (it's OK if the pieces touch).

Bake in centre of oven until edges are golden, flipping halfway through, about 30 minutes.
Stir mayonnaise, vinegar, mustard and honey in a small bowl. Drizzle over cauliflower, then sprinkle with parsley.
