Tomato Gratin

My son Cole did NOT like this (but he LOVES the Tomato Mascarpone Tartlets!!), but I thought it was fabulous!!! You could play with the recipe a bit, maybe cut it in half & put in a smaller dish or maybe serve in ramekins for individual servings which is also great if serving just 2 people.

Ingredients

  • 2 cups grape tomatoes
  • Olive oil
  • 1 cup mozzarella
  • 1/3 cup Parmesan cheese, grated
  • 2/3 cup panko bread crumbs
  • ¼ tsp cayenne pepper or smoked paprika (I used 1/8 tsp of both)
  • 1 TB chopped garlic, about 4 cloves
  • 1 TB chopped fresh parsley or 1 tsp dried parsley
  • 1 TB chopped fresh basil

Preparation

Step 1

Heat the oven to 400. Put the tomatoes in a greased pie dish. Drizzle with olive oil then sprinkle with mozzarella. In a small dish, combine the Parmesan, panko, cayenne/paprika, garlic, parsley & basil. Sprinkle all over the top. Drizzle with more olive oil. Bake for 20-30 minutes or until golden.
