Preparation

Step 1

1. Heat oven to 400°F. Spray 15x10x1-inch baking pan with nonstick cooking spray. In large bowl, drizzle Simply Potatoes with oil; stir to coat potatoes well. Sprinkle with 2 tablespoons taco seasoning mix; stir to coat. Spread potatoes in single layer in baking pan.
2. Bake 15 to 20 minutes, turning once, until potatoes are golden brown and slightly crisp.
3. Meanwhile in medium bowl, beat together cream cheese, sour cream, cilantro and remaining taco seasoning. Beat until well mixed and smooth. Spread into thin layer on serving plate. Top with cheese, tomatoes and black olives. Serve with potato wedges**.

Tips & Substitutions:
* You can easily substitute regular taco seasoning if you are unable to find chipotle taco seasoning mix.

** Best if potato wedges are served warm. To reheat wedges, place in aluminum foil and bake in 400°F oven 6 to 8 minutes.
