Baked Spinach Falafel

  • 2 cans chickpeas drained and rinsed
  • 5 cloves garlic
  • 2 tbsps sesame seeds
  • Tsp cumin
  • Tsp coriander
  • Salt and pepper to taste
  • 1 bag baby spinach
  • 2 egg whites
  • 2 tbsp almond flour
  • 1 tbsp evoo


Servings 12


Step 1

Put chickpeas in food processor and pulse till it makes a grainy paste
Add in remaining ingredients and process till combined

Pour batter into muffin tins (12). Bake at 375 for 20 mins or until firmly set.

Top with some hummus.
