Cast Iron Raclette

Ingredients

  • 7 oz. raclette cheese, per person, sliced into 1/4" slices
  • Baby Red potatoes or Fingerlings, boiled (about 4 to 6 per person)
  • Crisp cooked bacon
  • Sliced prosciutto
  • Sliced cooked sausages
  • Zucchini sliced thickly, cooked (or other vegetables)
  • Cornichons

Preparation

Step 1

Preheat oven to 400 degrees. Preheat 10 in cast iron skillet in hot oven for five minutes, then remove from heat and swirl 1 Tbs vegetable oil in skillet. Place cheese slices onto skillet and broil in oven until melted with a layer of chewy “skin” on top. Serve by sliding hot pieces of cheese over suggested accompaniments
