Ingredients

  • 1 Tbsp oil
  • 1 medium sweet onion, chopped
  • 3/4 lb ground skinless chicken breast
  • 1 1/2 tsp ground cumin
  • 1 (32-oz) carton low-sodium chicken broth
  • 1 (10-oz) can diced tomatoes and green chiles
  • 1 (3/4 lb) sweet potato, peeled and cut into cubes
  • 2 Tbsp chopped fresh cilantro

Preparation

Step 1

Heat oil in large saucepan over medium high heat. Add onion and cook, stirring frequently, until softened, about 2 minutes. Add chicken aqnd cumin; cook, breaking up chicken with wooden spoon, until browned, about 3 minutes.
Stir in broth, tomatoes and green chiles, sweet potato, and parsnips; bring to boil. Reduce heat and simmer until sweet potato is fork tender, about 15 minutes. Serve sprinkled with cilantro.
