Ingredients
- Filling:
- 4 cups peaches, sliced and peeled (or two cans sliced peaches, drained, reserving 1/4 cup syrup to use instead of water)
- 1/2 cup sugar
- 2 tablespoons flour
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- 1/3 teaspoon almond extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 tablespoons butter
- Batter:
- 1/2 cup flour
- 1/2 cup sugar
- 1/2 teaspoon baking powder
- 1/3 teaspoon salt
- 2 tablespoons butter, softened
- 1 egg, slightly beaten
Preparation
Step 1
Preheat oven to 375 degrees.
Filling:
In medium bowl, combine peaches, sugar, flour, lemon juice, vanilla and almond extracts, cinnamon, salt and water (or syrup). Turn into baking pan. Dot with 2 tablespoons butter.
Batter:
In a medium bowl, combine all batter ingredients and beat with wooden spoon until smooth. Drop in 9 portions over filling, spacing evenly. Batter will spread during baking.
Bake for 40 to 45 minutes, or until peaches are tender and crust is golden. Serve warm with vanilla ice cream.
