Ingredients
- 2 lbs. chicken
- 2 small onions, coarsely chopped
- 5 cups water
- 1/2 cup flour
- 1 cup vermicelli
- 2 tbsp. butter
- 3 tbsp. curry powder
- 1/2 cup grated Parmesan or Gruyere
- pepper, cinnamon, salt
Preparation
Step 1
Place chicken, water, onions and seasoning in a large pot. When water boils, cover pot and simmer over low heat 40 mins. Remove chicken from pot. Cook vermicelli in water. Drain, reserving stock, and add 2 tbsp. butter, and set aside. Brown flour in 2 tbsp. butter. Add 3 cups of chicken stock. Salt to taste. Add curry powder and stir until thick. Chop chicken into small pieces. Place half of vermicelli in bottom of a casserole dish. Sprinkle it with some of the parmesan. Arrange half of the chicken and pour curry sauce over the ingredients. Repeat. Bake in a hot oven for 20 mins.
