- 10 pieces of sheeps milk feta cheese
- 4 T extra virgin olive oil
- 2 T fleur se sol
- Basil oil
- 2 cups basil

Preparation

blanch basil in boiling water
shock in ice bath
put in blender
add 1 cup of oil and salt , puree
pass through cloth
3 pieces of tomato, with 3 slices of melon with 2 pieces of feta
drizzle with olive oil, basil oil, balsamic
garnish with basil
