Lemon Cookies with Lemon Glaze

  • 2 c. flour,
  • 1/2 t. baking soda
  • 1/2 t. salt
  • 1 T. finely grated lemon zest, plus 2 tablespoons fresh lemon
  • juice
  • 1/2 c. butter
  • 1 c. granulated sugar
  • 1 egg
  • 1 t. vanilla extract
  • Lemon Glaze (just whisk ingredients together)
  • 2 c. confectioners’ sugar
  • 2 T. finely grated lemon zest
  • 1/3 c. fresh lemon juice

Preparation

Step 1

Preheat oven to 350 degrees. In a medium bowl, whisk together flour, baking soda, and salt. In mixer, beat butter and granulated sugar until light and fluffy. Add egg, vanilla, lemon zest, and lemon juice and beat until combined. With mixer on low, beat in flour mixture. Drop dough by heaping tablespoons, 1 inch apart, onto baking sheets. Bake until edges are slightly underdone. Let cool 2 minutes on sheets, then transfer cookies to a wire rack to cool completely. Put cookies back on the cookie sheets (so the glaze can really soak in) and spread with Lemon Glaze and let set, about 1 hour.
