Easy Taco Casserole

Ingredients

  • 1 pound Lean Ground Beef or Ground Turkey
  • 1 cup Cookwell & Company Two Step Taco Mix
  • 1 can (11 or 12 oz.) corn kernels, drained (Mexican or fiesta-style preferred)
  • 8 ounces (1 cup) sour cream or softened cream cheese
  • 1 jar H-E-B Green Chili Tomatillo Salsa
  • 8 ounces (2 cups) Shredded Mexican Cheese
  • 10 to 12 corn tortillas, cut or torn into bite sized pieces

Preparation

Step 1

Heat oven to 375 degrees F.

Coat a 9X9 inch or 7X11-inch baking dish with non-stick cooking spray.

Brown meat in a large skillet over medium high heat for 6 to 8 minutes; drain pan juices. Stir in taco mix and simmer over medium heat about 5 minutes to thicken. Add sour cream and corn. Stir, then remove skillet from heat.

Spread half of meat mixture over bottom of prepared dish. Layer half of tortilla pieces over meat, then 1 cup cheese. Repeat layering process with remaining ingredients to finish casserole.

Bake 20 to 30 minutes or until hot and bubbly. Let stand 5 minutes; serve.
