Ingredients

  • 1 small onion sliced thin
  • 1 red bell pepper sliced thin
  • 1 stick of butter
  • 2 C Mashed potatoes
  • 1 C sour cream
  • 1 1/2 C shredded cheese
  • 6 slices bacon, cooked
  • 4 medium potatoes, cooked

Preparation

Step 1

Spread mashed potatoes evenly on bottom of casserole dish. Layer sour cream evenly over top. Sauté onion and bell pepper in butter. Evenly layer over top of sour cream. Slice potatoes and layer over onions and bell peppers. Add butter. Top with cheese. Bake at 350 for 25-30 minutes. Remove from oven and crumble bacon over top. (leftover mashed potatoes work good)
