Corn - Sauteed Spicy Corn

Ingredients

  • 2 - 12 oz. bags frozen corn, thawed and drained
  • 2 medium avocado, cut into chunks
  • 1/2 medium onion, sliced thinly
  • 2 coves garlic, minced
  • 1-2 jalapenos, ribbed, seeded and minced
  • 6 Tbsp. butter
  • 2 Tbsp. water
  • 2 Tbsp. lime juice
  • salt

Preparation

Step 1

I*n a large skillet, heat butter over medium high heat until brown and foamy.

Add the corn, onion, garlic and jalapeno and stir to coat with the but5ter. Cook the corn for about 12-15 minute, stirring occasionally, until the corn browns and begins to stick to the bottom of the pan.

Sprinkle in the water to help loosed the brown bits, and stir to scrape up all the flavor.

Once the water has evaporated, remove the corn to a large bowl and stir in the avocado and lime juice. Add salt to taste.
