Scallion Lo Mein

Ingredients

  • 4 oz linguine or thin spaghetti
  • 1-1/2 tsp vegetable oil
  • 1 Tbs minced fresh ginger
  • 2 Tbs low-sodium soy sauce
  • 1 tsp oriental sesame oil
  • 1 large garlic clove, minced
  • 16 green onions, cut in 1-inch pieces

Preparation

Step 1

Cook noodles in boiling salted water until just tender but still firm to bite. Drain well. Rinse under cold water. Transfer to bowl. Add soy and sesame oil and toss. (Can be made 2 hours ahead. Cover and let stand at room temperature.

Heat vegetable oil in wok or heavy large skillet over medium heat. Add ginger and garlic; stir-fry 30 seconds. Add onions; stir-fry 2 minutes. Add noodles. Stir-fry to heat through and serve.

Note: Can use fewer green onions and add thinly sliced celery, red or green pepper, bean sprouts, leftover chicken, pork, or other meat.
