Candy Apple Sundaes

Ingredients

  • 1/4 cup butter
  • 1/2 cup firmly packed brown sugar
  • 1/4 cup golden syrup (grab it at Whole Foods)
  • 1/4 cup cold water
  • pinch salt
  • 1 can (14 oz) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons brandy
  • apples (use nice round red ones that ‘stand up’ nicely)
  • ice cream
  • chopped nuts
  • Optional: Baked Apple Sundae
  • 4 Apples (honey crisp work really well)
  • 4 tsp. brown sugar
  • 1 tsp. cinnamon
  • vanilla ice cream
  • caramel sauce
  • chopped walnuts

Preparation

Step 1

Place the butter in a saucepan and melt it gently.

Add the brown sugar, golden syrup, water and salt.

Heat gently at first and stir constantly as the sugar dissolves.

Bring to a boil, still stirring, until the mixture really bubbles like mad.

Reduce the heat and add the condensed milk, vanilla and brandy.

Stir until it’s nicely combined and a good caramel color, then take it off the heat.

Cut the top bit off the apple, and scoop out all the inside flesh. (Use a melon baller or a teaspoon)

If preparing apples more than 5 minutes before serving, squeeze lemon juice over the apple to stop it from browning.

Fill the apple with a scoop or two of ice cream, and drizzle with the warm caramel (if the caramel has thickened while you got the apples ready, just gently heat it again, or add one more dash of brandy).

Top with chopped nuts.


Optional: Baked Apple Sundae
Preheat oven to 350.
Combine brown sugar and cinnamon in small bowel and set aside.

Wash each apple and pat dry.
Using a small paring knife core the apple.
Be sure to not cut all the way through the apple.
You should have a hole at the top that is about an inch in diameter. Place apples in a square baking dish.
Divide the brown sugar among the apples.
Be sure to cover the entire inside of each apple.
Bake apples 40-50 minutes.
Apples should still hold their shape but be cooked through.
You will hear popping and the juices will leak out of the apple-this is okay!

Place apples in serving dishes and fill with ice cream.
It works best to use a small scoop, like you would use for cookie dough. Drizzle caramel and nuts over the top.
Serve immediately.

**Note: Be sure to use apples that can hold up to baking and that you like the flavor of. Apples such as the honey crisp apple for this, but there are countless varieties of apples out there so find your favorite!!
