French Hungarian Salad

Ingredients

  • 1/2 c. olive oil
  • 1/2 veggie oil
  • 1/2 red wine vinegar
  • 2 Tbsp. water
  • 1 1/2 Tbsp. Dijon mustard
  • 1 Tbsp. paprika
  • 2 tsp. salt
  • 1 small garlic clove
  • 1 tsp. pepper
  • 1 head romaine lettuce, torn into bite sized pieces
  • 2 c. shredded red cabbage
  • 1 c. (about 4 oz) crumbled feta cheese

Preparation

Step 1

Combine first 9 ingredients in blender and blend until smooth. (Can be made 1 week ahead; refrigerate.)

Combine lettuce, cabbage and feta in large bowl. Add enough dressing (use sparingly at first and adjust) and season to taste. Toss well.
