Ingredients

  • 1 cup flour
  • 1/4 cup Argo® Corn Starch
  • 1 teaspoon Argo® Baking Powder
  • 1/4 teaspoon baking soda
  • Dash salt
  • 1/2 teaspoon Spice Islands® Ground Saigon Cinnamon
  • 1/4 teaspoon Spice Islands® Ground Ginger
  • 1/8 teaspoon Spice Islands® Ground Nutmeg
  • 3 tablespoons butter, melted
  • 2/3 cup sugar
  • 1/2 cup low fat buttermilk
  • 2 eggs OR 1 egg plus 2 egg whites
  • 1/4 cup Karo® Dark Corn Syrup
  • 1 teaspoon Spice Islands® Pure Vanilla Extract
  • Powdered sugar (optional)

Preparation

Step 1

1.Preheat oven to 350°F.
2.Combine flour, corn starch, baking powder, baking soda, salt, cinnamon, ginger and nutmeg in a small bowl; set aside.
3.Whisk butter, sugar, buttermilk, eggs, corn syrup and vanilla in a large bowl. Gradually stir in flour mixture until smooth. Pour into a greased 9-inch square baking pan.
4.Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack. Sprinkle with powdered sugar, if desired.
5.TIP: To dress this cake up, drizzle with a simple glaze: Combine 1/2 cup powdered sugar, 1/2 teaspoon Spice Islands® Pure Vanilla Extract and 1 to 2 tablespoons milk; stir until smooth. Drizzle over cooled cake.
