Cauliflower with Cheese Sauce

Ingredients

  • 3 c. fresh cauliflower
  • 1 c. cold water
  • cooking spray
  • 1 oz. margarine
  • 2 tbsp. white all-purpose flour
  • 2 c. fat free milk
  • 3/4 c. cheddar cheese, finely shredded, divided
  • 1/8 tsp. paprika
  • 3 tbsp. chopped parsley

Preparation

Step 1

1. Preheat the oven to 350 degree F.
2. In a medium saucepan place cauliflower and water and bring to a boil. Cover, reduce heat and simmer for 8-10 min. or until crisp and tender.
3. Place cauliflower in a 1-qt casserole coated with cooking spray.
4. In a small, heavy saucepan melt margarine over medium heat; add flour.
5. Cook, stirring constantly with a wire whisk, 1 min.
6. Gradually add milk, stirring constantly, 10 additional min. or until thickened and bubbly.
7. Remove from heat; add 1/2 cup cheese, stirring until cheese melts.
8. Pour cheese mixture over cauliflower, stirring to mix well. Sprinkle remaining 1/4 c. cheese and paprika over casserole.
9. Bake uncovered for 15-20 min or until top is golden. Sprinkle with parsley.
