  • Cake:
  • 2 1/2 C all purpose flour
  • 2 tsp. baking soda
  • 1/4 tsp. salt
  • 2 tsp. cinnamon
  • 1 C light brown sugar, packed
  • 1 C white sugar
  • 1 1/2 C butter, softened
  • 2 large eggs
  • 2 tsp. pure vanilla
  • 3 C grated carrot
  • 1/2 C crushed pineapple, drained
  • 1 C raisins
  • 1 C chopped walnuts
  • Icing:
  • 16 oz. cream cheese, softened
  • 1/2 C butter
  • 1 T. fresh lemon juice
  • 2 tsp. pure vanilla
  • 3 C confectioners' sugar

Preparation

Step 1

Preheat oven to 350 degrees.

Prepare 2 9" pans. Mix flour, soda, salt, cinnamon, and sugars. Add butter, one egg, and vanilla. Blend with mixer on low. Beat on medium 2 minutes. Add the other eggs, one at a time. Add carrots, pineapple, raisins, and nuts. Thoroughly mix.

Bake 60 - 70 minutes. Cool in pans for 10 minutes; invert on rack. After icing, refrigerate 1 hour to set icing.
