Black Bean Lettuce Bundles

This is truly a no brainer. Assemble everything and eat it like a taco. Lettuce replaces tortillas making this a low calorie grab and go meal you can prepare in less time than it takes to wait in line at a fast food joint.

Ingredients
- 2 15 oz. cans 365 Everyday Value no-salt-added black beans
- 1/2 avocado, mashed
- 1/2 green bell pepper, chopped
- 3 scallions, chopped
- 4 cups cilantro, chopped (leaves only)
- 1 teaspoon ground cumin
- 1 clove garlic, minced
- 4 cups mild low-sodium salsa
- 2 tablespoons freshly squeezed lime juice
- 8 large romaine lettuce leaves

Preparation
Step 1
Place beans over medium heat until warm, about 5 minutes and pour into bowl. Mash beans and avocado together with a fork. Mix in all remaining ingredients, except lettuce. Place 1/4 cup of filling in the center of each lettuce leaf like a taco and ENJOY :)
